The conventional way to prepare emulsions is using anionic or cationic surfactants, and/or ethoxylates, with high temperature and high-shear agitation. This process demands time, energy and specific equipment as the production of an emulsion involves maintaining the stability of an immiscible system.
Even using all the appropriate equipment, ingredients and processes, emulsions frequently face stability issues. To overcome these issues, the combination of two or more surfactants is regular practice, as is the use of rheology modifiers to thicken the aqueous phase.
Emulfeel® SGP CHI is a emulsifier based on Double Gel Network (DGN) technology with a high degree of vegetal ingredients, that provides structuring of lipid and aqueous phases. It enables the reduction of ingredients and versatility in the creation of viscous or fluid textures in addition to ensuring a light, aqueous and velvety residual sensorial. It can also be used as a sensorial adjustment or viscosity modifier, in cold or hot processes.

Concentration of use 2 to 5% as the main emulsifier and 0.5 to 2% as co-emulsifier or sensorial modifier. With Emulfeel® SGP CHI it is possible to develop emulsions with various textures and sensorial, such as
